Happy Festivus! How to plan your next dinner party!

Image
~This post contains affiliate links~ How to plan your next dinner party! Whether you prefer the ugly sweater theme or the sassy and classy theme, there are ways you can host your own Festivus dinner party with your friends and/or family without going insane or broke. Dinner parties are my favorite events to host at home. I love getting my favorite group of people together to enjoy a delicious and hearty meal. I have never asked anyone to bring a dish, however, my guests are so happy to attend that they bring one anyway! Festivus is celebrated on December 23rd as a non-secular (less stressful) holiday. This is a holiday you really can celebrate whenever you like! Create your own Festivus - maybe in the spring, maybe in the summer! You can give it your own creative name and get your guest list ready. If you're really going all out, set a theme for your party!  Dinner parties tend to look expensive in photographs. They also look incredibly intimidating. What they don't show is t...

Quick and Easy Make Ahead Breakfasts | Meal Prepping for the Busy Mom

Image
Mornings are insane after you have kids. It's true. And they don't seem to get any easier when they get older either. So how can you make things go a little smoother after a night of little to no sleep? Meal prepping is the way to go. I know meal prepping can sound intimidating, but you don't have to do them all at once. Pick two and go from there. When those are gone, pick two more! It's really easy and it doesn't take up too much of your time. Also, those mornings will run SO much smoother. I know you can go to the store and spend $50 on a ton of frozen waffles, pancakes, rolls, and more, but why not try saving a few dollars and make your own? The other day, I realized that I had been spending $20 a week on mini muffin boxes that only lasted the first two days. There were only 16 muffins in a box. So I spent $1 on a box of chocolate muffin mix, took out my mini muffin tins and made 48 in under an hour. 48 mini muffins. All together with cooking oil a...

Campfire Stew ~ Creamy Sausage and Vegetable Stew

Image
What is campfire stew?  Well, it's just a stew that I started cooking over a campfire at the lake with my family. It grew so popular that it has been requested at most camping expeditions and events. Serve this stew alongside my Viking Pie for your cool-weather dinner party. Honestly, you don't have to cook this over a fire...you can make it wherever you wish. It is   much more convenient to make in the kitchen. This recipe is SO versatile and incredible, you'll have people swarming your campsite (or dining room) to slurp up every last spoonful. AND it's fairly easy to make. I never wanted to give this recipe out. Ever. Never, ever, forever, never, ever. However...I get tired of it being requested so often that I'll just pass it along so folks can make it themselves. Not only is it delicious, but it is also surprisingly healthy. It is a low-carb stew and definitely doesn't taste like it! Here we go! Ingredients: 8 oz. cream che...

Low Carb Cream Cheese | Crepe Recipe

Image
~This post contains affiliate links~ This is a short and sweet recipe for cream cheese crepes. These measurements will make 1 crepe. So double, triple, and quadruple as needed.  I have used this with an 8oz. block of cream cheese to make 4 good sized crepes. Finding healthy recipes that don't taste like cardboard can be really difficult. Especially when it's a breakfast recipe. This one here is delicious and can be filled with any kind of fruit or fruit spreads you wish. Ingredients for 1 crepe 2 tablespoons cream cheese 2 egg whites (half a cup) (I buy egg whites by the carton so I don’t waste my yolks) 1 Tsp Vanilla Dash of cinnamon and nutmeg (optional) ~All the ingredients above add up to 3g of carbs~ Make it Soften the cream cheese Using a whisk, processor, or magic bullet (this works great) blend ingredients for 30 seconds. Preheat your non-stick pan on medium heat When heated, add a small amount of cooking spray Pour...

Viking Pie with Ground Pork Chorizo ~ SPICY

Image
~This post contains affiliate links~ If you like spicy foods , this dish is for you. It has an incredible kick and the flavor is incredible.  This recipe is made from scratch. If you choose to use frozen hashbrowns, you won't get the full flavor intertwined with the shredded potatoes. SO...what is a Viking Pie ? I coined this term when I started making these dishes. When I tried to come up with a name for it I ended up saying, "I don't know what to call it...it just looks like something the Vikings would eat." And there we go. The Viking Pie was born. Meat and potatoes. Those are the main ingredients in this recipe. With a few little additives, you'll have yourself a pie that everyone will love. So what do you need? Ingredients: Chorizo (can be purchased at most grocery stores) 4-5 medium potatoes 1/4 cup Ranch dressing 1 TBSP Season salt 2 eggs 1/4 cup egg whites (or one egg minus the yolk) 1/4 cup parmes...
